Makes 1 litre
4 chicken thighs (or the stripped carcass from a roast)
1/2 onion
1 litre water (or enough to cover the chicken)
a pinch of salt and a few grinds of pepper
– Put everything in a large pan or pressure cooker and cook for 20 minutes in the pressure cooker, I’d guess at an hour in a regular pan.
You can add other things such as a few carrots or celery sticks dependent upon what you’re using it as base for and what flavours will work.
